AROMA:

Fresh notes of mint, especially, and a hint of honeysuckle as a gentle top note.

COLOUR:


Green with a golden tint.

TASTE:

A good mouthfeel on the palate, with notes of fresh herbs and nuts, smoothly followed by a medium intensity of bitter, peppery notes. A well-balanced and harmonious oil to use in a variety of culinary endeavours.

PRESERVATION:


Olive oil does not mature with age – it should be consumed as fresh as possible to make the most of both its culinary and health benefits.


GASTRONOMIC SUGGESTIONS

A versatile wonder this olive oil can be used with almost anything. Delicious with steamed fish, Caprese salad, steamed veggies, or pasta. A tablespoon mixed into yoghurt will reduce the acidity of the yoghurt for an ultra creamy result. It pairs exceptionally well with eggs; simply drizzle over boiled eggs or whisk a glug into your egg mixture for the lightest omelette. You can also fry our breakfast eggs in it.

STORAGE:

Room temperature, 16–18 °C (60–64 °F). All extra virgin olive oils can be used below 205 °C (401 °F).

PRODUCTION QUALITY:

We rush our harvest to the processing plant to ensure there are less than 0.8% free fatty acids in our final product, making it an Extra Virgin Olive Oil (EVOO). We maintain a processing temperature of under 27 °C – in other words, our olive oil is cold pressed. The oil is preserved without heat or added preservatives, so there’s no compromise on quality, nutritional value or flavour.
